My almost disaster slice...

So, last night I pulled out Bill's cookbook and landed upon a 'coconut passionfruit slice' recipe, it looked good I quickly whipped up the base of the slice, spread it on the base of the pan and popped it in the oven. It was supposed to cook for 15 minutes.
Meanwhile I continued on with the filling. I did not have enough cream so I doubled the amount of coconut milk and added some milk (which I thought would suffice), dumped in the shredded coconut, passionfruit pulp, lemon zest, lemon juice , eggs (from my very own chickens) and sugar. Stirred it all up, it was very runny and I did think to myself I am just not sure about this!

The base appeared to be cooking as it was turning brown and 15 minutes were up, so I pulled it out and began to pour the filling over the top...it was at this moment that the DRAMA occurred...the base was NOT done and as I poured the filling over it bascially spread to the sides and created a big whole in the middle. But what could one do, the damage was done so I just poured the rest of the filling on top and watched it mix together with the uncooked base. I put it back in the oven and hoped for the best. It needed to cook for about 45minutes and we were leaving in 35. I cooked it as long as I could then turned off the oven and walked out the door.

The good news is we came home and I pulled it out and hey it did not look so bad afterall. And it tastes pretty darn good. I definitely think Bill's cooking instructions were a little off (or maybe my oven?) but nonetheless I can add it to the list of new recipes and I am taking the slice out to share at a meeting tonight.
